Ingredients:
- ½ pound turkey breakfast sausage
- 2 teaspoons coconut oil (or canola if coconut isn’t handy)
- Sliced cheddar cheese (I buy delicious white cheddar at Costco, and then make thick slices myself)
- 6 eggs
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- (feel free to add any other spices that you like in your eggs – we often also add onion flakes, but that’s just me. You do you.)
- 6 multigrain English muffins, split and toasted
Instructions:
- Heat a large skillet over medium/high heat.
- Divide sausage into 6 equal patties.
- Add 1 tsp oil to pan, and cook patties approximately 2 minutes each side, or until done. Remove from pan.
- Add eggs to pan and 1 tsp oil, and cook, approx. 4 minutes.
- Divide eggs evenly over bottom halves of muffins. Top each with 1 sausage patty, 1-2 slices of cheese, and top half of the muffin.
