Ingredients:
- 6 hard-boiled eggs (you’ll boil these ahead of time)
- 6 slices Whole wheat toast (you wont need this until it’s time for breakfast)
- 2-3 avocados (you wont need this until it’s time for breakfast)
- Extra Virgin Olive Oil (for drizzling)
- 1 teaspoon lemon juice
- sea salt and cracked pepper
Ahead of time Instructions:
- Boil 6 eggs. Allow to cool, and refrigerate
At breakfast time:
- Slice eggs, microwaving GENTLY for 20 seconds (you HAVE to slice eggs before you microwave them, or they’ll explode)
- Spread ¼ – ½ avocado on each slice of bread, and top with 1 egg.
- Drizzle with olive oil, lemon juice, and sprinkle on salt, pepper, and chia seeds.
