Hard-boiled eggs, toast, and avocado

Ingredients:

  • 6 hard-boiled eggs (you’ll boil these ahead of time)
  • 6 slices Whole wheat toast  (you wont need this until it’s time for breakfast)
  • 2-3 avocados (you wont need this until it’s time for breakfast)
  • Extra Virgin Olive Oil (for drizzling)
  • 1 teaspoon lemon juice
  • sea salt and cracked pepper

Ahead of time Instructions:

  1. Boil 6 eggs.  Allow to cool, and refrigerate

At breakfast time:

  1. Slice eggs, microwaving GENTLY for 20 seconds (you HAVE to slice eggs before you microwave them, or they’ll explode)
  2. Spread ¼ – ½ avocado on each slice of bread, and top with 1 egg.
  3. Drizzle with olive oil, lemon juice, and sprinkle on salt, pepper, and chia seeds.
