(great for a grab-and-run option)
Ingredients:
- ½ cup raw almonds
- ¼ cup raw pecans
- ¼ cup raw walnuts
- ½ cup sunflower seeds
- 1/3 cup dried blueberries
- ¼ cup agave nectar
- ¼ teaspoon cinnamon
- a pinch of cardamom
- a few pinches of fine grain sea salt
Instructions:
- Preheat oven to 325
- Line an 8x 8 inch pan with tin foil (parchment also works), and lightly coat foil with coconut oil
- Combine nuts in a food processor until coarsely chopped (avoid chopping too fine)
- In a large bowl, mix nuts and nectar until nuts are fully coated. Then add blueberries, spices, and salt and mix.
- Pour mixture onto the pan, pressing down with the spatula’s flat side to flatten it
- Bake for 15-18 minutes, rotating halfway through
- Let cool and enjoy!
