(everything’s better with peanut butter, Am I Right?)
Ingredients:
- 1 large ripe banana, mashed with a fork (about ½ cup)
- ¼ cup creamy peanut butter
- 1 cup rolled oats (NOT quick-cooking)
- 1 cup unsweetened almond milk
- ½ tsp vanilla extract
- ½ tsp ground cinnamon
- 1 tsp honey (adjust to taste)
- Optional Toppings: sliced bananas, cinnamon, dark chocolate chips
Instructions
- In a medium bowl, combine mashed banana and all other ingredients (yes, mixing in peanut butter can be a little messy)
- At this point, you can either cover the bowl and put it in the fridge, or pour directly into individual serving containers, if you have them handy.
- Refrigerate for at least 3 hours, or overnight
- To eat: stir well, add your toppings, and you’re set!
